I learned this lesson all too well when I visited Alaska and realized how my health was affected by a simple change in diet. My verse is below.

One Apple’s Carbon Footprint

In my hand, an apple,
in my safe Utah home.
I bought it in Alaska
for a single dollar.
So precious I saved it.
The label reads,
“Grown in New Zealand.”
Such a journey,
one piece of fruit.
How easily the transport
of all things exotic
might collapse.
And we, reduced to local fare,
would remember what generations forgot.
